Claims

Puravita Pan-O-Col is a bread based on oat and enriched with oat beta-glucan. It is proved that the use of oat bran rich in beta-glucan slows down the absorption of cholesterol by the gastro intestinal tract. 3 g of beta-glucan are necessary to decrease the cholesterol level (Food and Drug Administration, USA). 100 g or three slices of Puravita Pan-O-Col bread represents at least 25% of the required quantity.

Water.......................................................................700 g
Yeast........................................................................20 g

Ingredients

Wheat flour - oat flakes - oat bran - wheat gluten - iodized salt - yeast extract – wheat starch - dextrose - emulsifier: mono and diacetyl tartaric acid esters of mono and diglycerides of fatty acids (E472e) - antioxidant: ascorbic acid (E300) - enzymes*.

Store in a dry place (max. 25°C).
Close packaging tightly after each use.

Method

Mixing (spiral) 5 minutes slow speed + 6 minutes high speed.
Dough temperature : +/- 26°C.
Bulk fermentation: 15 minutes.
Scale 480 g.
Intermediate proof : 20 minutes.
Make up "bloomer shape", wet the dough and roll in "Puravita Pan-O-Col" Decor.
Final proof: 60 minutes at 28 °C.
Oven temperature: 230°C with initial steam.
Baking time: 40 minutes.
